Apple muffins! Yummy! Flour, sugar, cinnamon, vanilla, egg replacer, apple sauce, vegan butter, salt, & granny Smith apples! So tasty!
I made a tofu marinade with yumberry jam, soy sauce, & sriracha. I melted it in the microwave & then marinated some pressed tofu. It turned purple & was very tasty. I had it with steamed rice & steamed veggies. Very simple meal & tasty. :)
I have been having the worst week. I haven’t been cooking anything new. I hope to relax soon & get back to the yummy food.
Dinner tonight was tofu delight! There’s a restaurant that I used to frequent that recently went on Facebook & misrepresented a non vegan dish as a vegan dish. When I commented on how I had asked about that dish just a few days before the post was made & I was told that chicken broth was used, they didn’t reply nor correct their post. Needless to say I won’t be going back. Anyway, the point to that story is that they made tofu delight & I loved it. I decided to make my own. This was my version. I fried garlic, fresh grated ginger in olive oil for a few minutes. I added vegetable bouillon cube crumbled & a small amount of water, lime juice, & a splash of soy sauce. I added carrots, celery, snow peas, broccoli, &, green onions. I added a bit more soy sauce, lime juice, & a little more crumpled bouillon cube. After it cooked for a bit & the carrots were tender I added pressed cubed tofu. I let it cook until the tofu was done. I had sticky steamed rice & I served it on the side. It was very close to the tofu delight I’ve had in the past. It was tasty. :)
Couscous & stir fry! Stir fry sauce was soy sauce, rice wine vinegar, ginger, garlic, lemon juice, sriracha, & agave nectar. I stir fried carrots, celery,snow peas, & tofu. I put the stir fry on top of the couscous. It was yummy!
Pasta tofu salad! Pasta, pesto sauce, mushrooms, spinach, fried tofu, & daiya mozzarella cheese. I fried the tofu in olive oil & Italian seasoning & I tossed it all together! Yum!
Last night I made a super easy & tasty potato salad & cabbage soup. The potato salad was Yukon potatoes (any potato will be just as tasty) olive oil, green onions, Basil, parsley, garlic, & salt. I boiled the potatoes & mixed everything together. I cut the potatoes into chunks & it was delicious! The cabbage soup was garlic yukon potatoes cooked in olive oil & then I added bouillon broth, cabbage, corn, & parsley. Once everything was cooked, I put it all in the blender & pureed. Once creamy, I poured it back into the pot & added some salt! It was all very tasty!
Tonight I made pasta with cashew Alfredo sauce with spinach & mushrooms. While the pasta boiled, I blended cashews, basil, garlic, water, & flour together. Once the pasta was done, I drained & set aside. I took the blended sauce & slowly cooked on the stove, frequently stirred until it thickened. I cooked mushrooms & wilted spinach in olive oil with garlic, Italian seasoning, & a dash of salt. After it was done, I tossed the veggies with the pasta, poured the sauce & tossed again. I sprinkled Daiya mozzarella “cheese” on top. It was good! Very creamy! Yummy dinner! :)
Tonight’s dinner was roasted garlic couscous. I fried tofu in olive oil, garlic, Italian seasonings. I added black beans, chickpeas, lemon juice, & red pepper flakes. I cooked it for a bit. I served the beans on top of the couscous & I sprinkled fresh green cabbage on top! It was very delicious!
